How to make Elbasan Tava?
Ingredients
- 4 tablespoons of butter
- 2 tablespoons of oil
- 800 grams of lamb shoulder
- 10 shallots
- 2 glasses of water
- 2 teaspoons of salt (can be reduced or increased)
- 2 cloves of garlic
- 1 teaspoon of thyme (optional)
- 1 teaspoon dried basil (optional)
- 1 teaspoon red pepper
- 2 cups strained yoghurt
- 3 egg yolks
- 4 tablespoons of oil
- 3 tablespoons of flour
- 1 teaspoon of salt
- 1 teaspoon black pepper
- 1 tea glass of water
- After 2-3 minutes, add salt, enough hot water and spices to cover it.
