  • 5 large capia peppers
  • 175 grams of curd cheese
  • 10 sprigs of parsley
  • 1 teaspoon of salt
  • 1 teaspoon freshly ground black pepper
  • 2 egg yolks
  • 1 tea glass of flour
  • 1 glass of sunflower oil
  • 2 cloves of garlic
  • 2 tablespoons of vinegar

A recipe often made in Bulgaria is "Pirijeni cuski sirene". Its taste doubles when served as an appetizer with a vinegar-garlic sauce. However, you can of course make it without adding this sauce. You can also use a different cheese that does not melt in the filling of the recipe. You can make it more aromatic by adding basil, fresh thyme or rosemary. Roast the red pepper, which you have washed in plenty of water and dried, in the oven or on the stove. Peel the roasted peppers and remove the stem and the inner part.

For the inner filling; Chop the parsley finely. Mix with curd cheese, freshly ground black pepper and salt.

Fill the inside of the pepper with the cheese filling mixture you prepared, leaving no gaps. Close the mouth parts after folding them inwards.

Whisk the egg yolk in a large bowl. Put the flour on a flat plate.

After heating the sunflower oil in a shallow pan, fry the red pepper, first dipped in egg yolk and then in flour, by turning it upside down.

Serve the pepper on a serving plate with vinegar sauce mixed with finely chopped garlic. Share with your loved ones.
